Grimsby Smoked Chicken Sandwich

2 smoked chicken breasts from Vik’s Meats (ask Rick to slice it thinly)
4 tablespoons (60 mL) honey mustard from Niagara Herb Farm
1 loaf cheddar, potato & herb bread from Con Gusto Bakery
6 cherry tomatoes
fresh garden lettuce leaves
Cut 12 slices of bread from the loaf and lay on a cutting board. Spread mustard on 6 slices of bread and lay slices of smoked chicken on top. Top with a lettuce leaf, a slice of bread and top with a cherry tomato. Serves 6
